custom mat for driver's side, the thickness of custom mat will affect the performance of acceleration pedal
roof insulation - the more thickness hence more weight on it... some users experience insulation drop when they go through certain bump/ certain uneven road

Custom Mat --> you can actually make a cut out at the pedal area to avoid having contact with the accelerator pedal mechanics.
roof insulation --> its dampening material is indeed carries weight; else it wouldn't have the dampening effect to "hold" the milo tin from vibrating. Hence its normal to add some weight. As for the falling off dampening mat; i think its installation process issue.
My both 2 cars already done full floor + wheel arch + boot dampening and insulation. No problems at all. As for the roof, i believe the same methodology applies.
I believe luxury car also have such dampening material installed to give the "luxury" feel aka low cabin NVH. So end of the day its still the installation and labour skills that count.
