You can say you look forward to a more narrowed scope of work because it offers you the opportunity to carve out a specialty for yourself, and you want to build up a niche for yourself. Then give examples of such specialty in your field.

And you can also back the "boredom" part if they bring it up, by saying you also heard that MNCs offer lateral and horizontal career growth opportunities, i.e. you can rotate to other functions to learn new things, or you can strive to move up the ladder within your existing function, and that by doing so, you learn new things as well while deep diving into your current role.
