So of course you could put in a SATA SSD (7mm z-height) or a half-size mSATA SSD (this is a lot rarer)

If your intention is to go full SATA SSD, then you don't need to buy the spec that come with mSATA SSD (for caching).
Please note that spec that come with mSATA SSD also come with a ULV CPU (vs M CPU in spec that without mSATA SSD), which normally run cooler.
The Nvidia GPU is not on all the time. Nvidia Optimus technology will make sure laptop only utilise it when require (ie, when the Intel IGPU is not powerful enough to handle the task on hand).
