For gaming, I5 is enough. Only go for I7, if you`re doing video/3d rendering and etc. You can choose btwn I5 2500K Sandy Bridge or I5 3570K Ivy Bridge. Depends on you.
For K series CPU, you dont need a fancy mobo to go with it, any Z77 mobo will do but depends on your budget and preference. For non K CPU, use H77 mobo.
Only get GTX 680 if you insist or you have the cash. Users nowadays get GTX670 as it has the best price to performance ratio, i.e. best bang for buck.
PSU depends on your build, whether you plan to OC or SLI/CFX in the future or not.
Just the rig or full set, i.e. + monitor and peripherals.?
Yeah as I said my budget is one that has some headroom because I haven't dedicated my cash to my PC in 10 years so I had plenty of time for cash XD.
I am getting the full rig but I had to make sacrifices so that I could throw in my weight else where for example for my casing and my monitor I do not think I will go beyond mid range for both of them. I also will do away with speakers and get some decent headphones.
For the PSU I do not think I will OC it because I am still very new at this and I am quite scared to do so and the same thing goes for SLI. I will get a midrange PSU because I heard a good PSU is essential.

Assume u build this rig just for gaming , an i5 will do , the 670 pe is cheaper compare to 680 but with its factory overclocked , the performance is on par with 680 , and it can overcome 680 when overclock higher , I also include an SSD , nowadays the prices are very affordable and it's nice to use , u will know what I mean if u google SSD vs HDD , so u can use it for OS , softwares and games , storage use HDD , I pick a sleek small form factor casing , it also has good cable management , good air flow and also good quality . They are all my opinion , u can always pick the items u like u wish .

Thanks a lot dude, I will seriously take your advice on this. Yeah the only reason why I wanted the 680 was because I fell into the marketing trap....NEWEST GFX CARD DUDEEEE!!

and I want it to have some sense of it being future proof because 10 years ago when I bought my HP rig the guy promised me that BOSS CAN PLAY ALL GAMES but in the end gaming for me lasted for about a year and a half because the GFX card on that rig was pretty poor and I could not afford a decent card back then.
