You can unroot by flashing official stock firmware via Odin. Most official stock firmware won't wipe your data.

You use Nandroid only if you want to revert back as before you flash custom rom. Nandroid backup is BIG. Normally around 1GB per backup. After you success flashing new custom rom, use your Titanium to re-install back all you apps and data that sometimes not included in that new custom rom.

Though it adviceable to have atleast one Nandroid backup in your phone.
