2) Dex adds % for dodge and also Damage. DMG depends and its vary. I would recommend 1 eq with balance stats on both.
3) Its up to the stats of your bow which you want it to be. Only difference is that if you put 2 handed you can equip quiver, but if one handed you have two options to either put another bow or quiver on the off-hand slot.
