I'm not too sure about the icon, but you can try to use Home Switcher from the market to set your default launcher.

I think that happens when you didn't do a full wipe before flashing? I once forgot to do it as well when I flashed to 2.0, and man... it was really messed up.

You'll need to find the original ROM first unfortunately. But you can try to check whether the previous owner made any Nandroid backup of it. Just boot up recovery(CWM), and the menu should be quite self-explanatory.
I think the Arctic custom ROM is most probably the best choice for now. I'm using it too; so far so good. IMO, it's more stable compared to the original ROM because most of the bloatware were removed. Quite a few performance upgrade from 2.3.5 too, to put it bluntly.
