If you want to avoid any potential problems with the service centre, you can always backup your stuff then flash back to a Malaysian stock firmware, which will then be clean and unrooted, before sending to the centre.

Once you keep 'usb debugging' mode enabled, u should NOT get MTP mode anymore, I think..

Are you referring to OTA update? As far as I know, no.

For stock firmware, you need either Kies (the 'samsung' way) or flash via the Odin tool.

Press and hold power button for a long time, the Tab should shutdown or reset.

I think you can move some apps to the internal SD storage but I don't think apps can be moved to the external memory card. Usually I leave about 500MB free on my internal device memory - I use app2sd to move some apps to the internal SD storage.

Note : I currently have 499MB free in 'device memory', 2.96GB free in 'usb storage' and 2.44GB free in my 16GB external microSD. My Tab doesn't lag or hang.

It's quite nice, but there was one thing I couldn't stand - MKV playback sucked for me, with MX Player. Could be due to the fact that I loaded the CM9-based ICS ROM I downloaded from this XDA thread:

Not sure if there is another ICS ROM with good MKV playback, perhaps the AOKP one, hmm..

I think the easiest way is to install stock samsung rom for SEA, eg. DXJPI firmware.

I normally download stock firmware from sammobile site.

No official updates from Samsung. Only GB 2.3.6 so far.

Don't use Kies. If you want to stick to a Samsung ROM (i.e. not custom ROM) then you can find an Android 2.3.6 firmware for the P1000 on sammobile site and flash it using the ODIN tool - backup first, though.
