Which version MIUI you using? XJ or Au?
If Au, they support Ext3.
Not many roms using Ext2 though... Most of the roms either Ext3/Ext4.

Currently, I'm testing CM 7.1 stable release. But got an error when applying theme in Theme Chooser. It was a HDPI theme though

All ICS roms were still beta. Unlike GB roms which are pretty much stable builds.
But I can't wait so I myself using Miui Au ICS rom. |

Familiar yourself with rooting/flashing. Actually rooting is easy if doing it right.
In addition of what ShinnKQ has mention, revolutionary tools will let you S-OFF and will be ask to install 'recovery' which is the most important tools in flashing custom ROM.
