my 308 VTi does this once a while. I heard that 308 Turbo does this quite often, especially if you drive it hard before stopping it.

This means that your car's fan and its electric thermostatic switch is connected directly to your battery, rather than IGN (ignition) or ACC (accessories), nothing to worry about.
This is in fact better as it cools down your coolant/engine/radiator, rather than letting too much residual heat in the system and shortening the lifespan of your radiator, hoses, seals, gaskets, head, wiring, etc.
Unless, of course, you have a very weak battery, or one that is about to die off on you.
The thermostat (or they call it "sensor") is just a simple bimetallic strip, same as what you find in your household electric kettle.
On shutting down your engine after a long drive, your thermostat detects that it is still hot and switches on the fan. If your fan/thermostat is connected direct to your battery, obviously the fan will run even after you have taken out your keys.
On engines where it is connected to the IGN circuit, the fan motor will only run as long as your engine is running, or your keys are in the IGN position.
On the Iswara's engine, it is connected to ACC, so it runs if the key is in that position. This is what I do in fact, if the fan happens to kick in just as I switch off the engine, I will leave it at ACC to allow it to cool down the system as much as possible before I go off.
Or, if it happens to come on just before I am about to switch off the engine, I will let it run in IGN and then shut down right after the fan goes off.

The Fiat 131's fan was also wired direct to the battery.
If you are concerned, just ask your wireman to rewire the fan's positive wire to ACC or IGN.
I don't think there is any timer. It's just your thermostat triggering it off.
