Grade.
Example. A expensive Fully Synthetic oil of the wrong grade is worst off than a Mineral oil of the correct grade. Look for the correct API or ACEA or JASO rating
Viscosity
Example. If the engine calls for 10W30, 10w50 would be a poor choice. (Off topic: a Mineral 10w50 is a recipe for disaster).
