Depends what you're looking for;N8 for its camera, video recording and gaming capabilities.
Also, if you're concern of phone functionality (3G Video call, Assign Ringtone to contacts/groups, etc), N8 will work better.
N900 lack in terms of commercial games altough it does have some different type of game that no smartphone have since the N900 is more like a mobile computer. For apps, widgets, etc. N900 will have a lot of useful and nice ones; Maemo was the first to have Full Flash support, first to have Firefox? There's even Google Chrome port from Linux (Chromium) while the Android by Google doesn't even have it.
If talk about flexibility, customization, "powerful" apps, etc. N900 excels. Just look at FCam, it can turn N900 camera to something else, look at other "powerful" apps for N900, codecs and media players, there's the ever powerful mplayer which was for Desktop, now we can watch many types of media files including rmvb... and we also have "powerful" and "advance" widgets, see Queen Beacon widget...
For normal users, all the above may not matter or is not their concern because it's not what they're looking for or actually care; When you say all this, they may just say "Oh...."; but for those who appreciates, will be amazed and excited to know the supports/flexibility/etc.
So, what are you really looking for? N8 is a great if camera and video recording is your top priority, the phone function is also reliable and very good (while other smartphones still not as good). And finally, is gaming on mobile/smartphone very important to you?
