We all know Unifi give free fix phone line call right? That means most unifi user would have canceled their copper phone line service. The real question is, does the legacy old school FAX service work on Unifi?(because someone outdated still use fax machine)

Fiber is just a medium like copper.

The answer is YES. Fiber can transport fax machine data.

Newer fax machine which supports T.30, T.37(store n forward) and T.38 (realtime) over IP can also uses fiber as the channel
