Yes, now that you have root, you can switch around easily..To backup, use an efficient backup utility like nandroid and Titanium Backup..They will come very handy If you have any questions, feel free to ask them here..

Downgrade? I don't get what you mean. You can just use the Universal Androot to root your phone and this should work for you after that

I no longer use HTC Hero..I use the Nexus One now..But its possible to upgrade..There are several ROMs for Hero 2.1 actually

Nope..this one applies only to HTCs mostly..For Milestone, they have their own methods..
