Guitar Sound (Pick-up and its build), Want to ask and get more opinion...

yup, the ibanez have humbuckers, which helps in producing the heavier sound. strats are not really designed for heavy stuff.
remedy: get a hotter pickup, like the above suggestion.
sound wise, yes, pickup and body have certain effect to the sound. no, upgrading to an expensive pickup won't make your guitar sound like an expensive guitar.
