Lets say my iphone is official locked cant survive aple firmware updates.. do i still able to upgrade the phone to OS 3 ?

Im on a jailbroken iphone now. Lets says the software 3.0 is released and i wanted to upgrade to it.. i just update the firmware via iTunes straightly can?

and another question is.. if im on software 3.0 still can be jailbreak?
