Ok first I apologize if I am repeating something someone else had asked. There's just so much to digest here.
1) Now I have apps in my IT2G unbroken one. So if I finally decide to JB, I make a backup with iTunes, then follow the instructions on first page to JB, then restore my backup onto my IT2G (is the restore done with itunes also?). - This means a JB 2G touch with all my previous apps and savedate+score,etc ?
2) About Cydia. Is the apps from Cydia installed through the touch is by Wifi? Cannot like what's done with iTunes where I download all the apps I want with PC then sync to the touch? Also, is Cydia and installer is different "app" for the touch too?
3) Last. So if I wanna go back, I have to go DFU (the Power+Home 10 sec, then Home few more sec thing), restore my Firmware, restore my apps with backup through Itunes.
I wanted a nicer organizing pane for my apps (all legal) and its main reason I wanna try JB. Hope you guys can clarify before I make my leap.

1) Yes, after jailbreaking your unit, you can always restore your backup which would restore all your settings, savedata etc. Your apps would not be restored. You would have to re-sync them back. Not a problem at all

2) Yes, Cydia works pretty much like the app store. It's a little slow, but the content that it provides is really good. You can download stuff like themes and all, and then you can SSH it to your iPod Touch.
3) Yup, if you wish to revert to the original firmware, just select restore when you're in DFU mode.
You can use "Categories" from Cydia to categorize all your applications.
