The original kit is realistic enough (not specifically Asian or Caucasian), the eyes was appropriately sized to the face... with the new version they are going for Anime size eyes (No realistic human Caucasian have eyes these big), they just have the face a bit longer than what was in the Animation.
Though in the pic below the painter did over paint the size of the pupil/iris of the eyes (of the original). To look more Caucasian.. deeper eye sockets, more prominent cheek bones, a more pointy nose...
I would say they just remove the sculpted eyes and eye lids of the original and paste decal anime-like eyes in its place
Yikes, that's the first frontal shot I've seen of the face and I have to agree, they overdid the eyes. The sneak peek shots of her head from a downward angle were much more flattering :S Have to say the original kit looks decidedly Asian to me though - with the slanted eyes, almost hidden double eyelids and depressed cheekbones.
Going from the product name I reckon they're marketing her as a realistic(ish) Yoko, but in an effort not to turn off typical anime fans who prefer the exaggerated features they're used to they've enlarged the eyes. I think they gave her a pointer nose than the original too. Looking at the
unpainted prototype which appears to have more pronounced cheekbones and hooded eyes it's as if they took a look at it and went, hey, too much realism not enough moe, let's redo this a bit ... ironically in their attempt to meld realism + anime she's ended up looking more offensive to people who prefer the classic "anime" look, if the responses here are any indication

Well, "moe" is a very subjective term

While the term "moe" tends to associated with characters who look cute/innocent etc., it's also a verb that describes a sort of feeling a character elicits from the beholder.
Heisei Democracy has an extensive article on the subject. I can't stand Key's character designs (Air, Kanon) for instance, yet I find the characters in KyoAni's anime adaptation of Air (which was quite faithful to Key's style) absolutely moe.
As for why people would want realistic faces for anime characters, well, aside from personal preference as BeastX pointed out - I think a lot of anime fans ironically don't realise realism and anime are not mutually exclusive. There's
a spectrum of realism in anime/manga art - there's the Cardcaptor Sakura/Kanon stuff which is as far removed from realistic proportions as possible, there are classics like Ghost in the Shell which attempt a fusion of both, and there's stuff like Vagabond where the art is pretty much realistic.
As for Yoko, the original kit looks better IMO, now I wish Max Fac hadn't altered the face now that I've seen the face from a frontal angle.
