The question here is if I want more shine, can another layer of wax be placed on top? Coatings never gives me the shine that I want, esp on a dark coloured car.

AFAIK, after you've applied PPS, it is not advisable to add wax on top of it. I think it might damaged the PPS coating. I believe the car's level of shine after PPS is quite excellent. Anyone who has aplied PPS on their car want to comment on the level of shine?

It's not enough. Coatings will never give high levels of shine. It's all about protection. If it can give shine like what I've done to my car as I've posted in another detailing thread, then I'm sold. Otherwise, if I can't add more shine, then there is no point.
