To Catch Bees in AC:CF:

Start randomly shaking trees to find the bee hive.
Once it falls out of the tree, RUN DIRECTLY NORTH (or directly upward) on your screen. Don't run for too long, only one or two "screens" away from the tree. You do not want to see the bee's on your screen. (You have to react very quickly when you swing)
Before the music changes. (There is a point where it begins to speed up or get louder) You have to Press the minus "-" button on the wiimote.
This will pull up your item menu. (Select your Bug net and equip it) DO NOT UN-PAUSE or you could be stung.
The Tricky Part: The bees are coming for you, and you have equipped your net. You will be facing south (the bottom) which is the direction the bees will come at you.
Since it is still paused, put down the actual wii remote and only use the nun-chuck in your dominant hand. (The hand cursor messes me up, so I do not use it for catching the bees)
Once you have only the nun-chuck in your hand, with your finger on the "C" trigger. Carefully, with your other free hand, un-pause the game.
When the bees come at you, you will be facing them since they come at you from the south (the bottom). The moment you see them appear at the bottom of the screen you should swing your net. (Your reaction time might vary, but this is the point where I press the button)
If you time it correctly, your net will pass through the cloud of bees, and you will catch one, without getting stung.
