I think cydia have about 3 apps that can function according to your needs there. You can try ruBooks, Docs or Books. Just transfer your pdf,word or ppt files via openSSH to the specified folders.

IMHO, I didn't use them so often as it's quite hard to scroll a 100+ pdf file which the app doesn't provide a search function.
Hence, its very difficult to jump to a certain chapter.

If you're looking for an ebook reader for the IpodTouch, I recommend Stanza from the app store. Its free and there are tons of downloadable ebooks.
