You mean the name beside the wifi logo? Normally that's the name of your telco/Carrier you're using with your iPhone but if you're with a JB iPhone, you need to install "Pyscho" Super Prefs to have the features to change the "Carrier Name"(Fake Carrier) to you own desire names.And i cant seem to find a working version of iphone browser..
