Sorry David, I having problem for chinese input -Setting->General->Keyboard -> even i tick chinese simpled and enable pinyin and handrecognition. The pull up options for Chinese characters is not there even i switch to chinese input from SMS. anyone got this problem?
Well.... I have installed iAcces for iPod Touch, but I'm not sure whether it is different from iPhone (Should be the same applies to iPhone)
First of all.... here's my setings for Chinese settings. (I think you can actually make iAcces works
WITHOUT turn ON those default Chinese Settings)

If you have successfully installed iAcces from the Repo in Cydia, you should have iAcces icon on your Home Screen.

When you touch on the iAcces to go into iAcces Menu, sometimes you may get 'DEAMON did not installed' issue. I got this error before, but not sure what had I done/set, now I managed to access into iAcces Menu without 'DAEMON not installed' error message. If it shows, you just ignore it. Here's the contents of iAcces (Settings Page indeed).

After that, you just go into 'Notes' or 'Contacts' or anywhere else can key in something. Example here, I choose to use Notes.
You should see a different 'keyboard' from usual one, once you have 'activated' Chinese (Simplified or Traditional) like below.

See the "GLOBE" symbol ?? Yes.... touch it ONCE you will get the below (left pic, firmware 2.x default hand-writing recognition), touch again you will get pic on the right.

Touch on the 「中」button will actually activate/change iAcces Chinese Inputs. Below are the sequences of Chinese Inputs available.
