In terms of sharpness a smaller screen will generally look sharper than a bigger screen. Some more 720p projector vs 50" plasma (assume Full HD) is no contest - the plasma would be sharper.

If you're going to install the ceiling mount now, some hacking of the plaster ceiling will be involved. Also to be safer, you can install directly to the concrete.

You can place the projector lower, but pls check the amount of vertical shift your projector has.
