A simple reason will suffice in bridging the tech gap... Maybe Laplace wiped out the remaining history of early UC?
Actually another reason is that starting from a certain time in UC, they try to cut cost on the Gundam they produce, so they come out with F91 and Victory Gundam which is way smaller. F91 is 16m if I'm not wrong, while Nu Gundam which is introduce earlier than F91 is a 22 m MS, so there a huge height difference between them.Don't underestimate the technology in F91.
