As a beginner, I'll be looking at some basic setup with some degree of realism.
For a start, a proper cockpit with seat (or any recommendation that can simulate this setup too? Hehe) and as you say, the logitech dfgt and single monitor first. What about PC? Any minimum requirements and what game disc should I be looking at from a beginners perspective?

Which games? I only qualified to give my opinion on PC sim racing as I'm not into console sims.
imo if u like massive worldwide community where u can race them everyday in a instant just by clicking "join session/race", then go for
iracing, downside is u gotta be willing to spend as everything(each cars and each track) is paid and monthly subscription must be paid as well.
there are also other sims such as
Rfactor 2 which have dynamic road grip level, dynamic weather, community mod tracks and cars(most of which are free), one of the best(if not the best) ffb in any sims today. Downside is graphic not fully optimised and some might find managing different mods to join different race sessions a hassle and confusing.
and then there is
assetto corsa, never tried this yet but feedback is its pretty good and many are waiting for the final release of the game as currently its under "Early Access" which multiplayer is currently unavailable(correct me if i'm wrong).
there is also
Project CARS but imo I doubt this will be a serious sim like rf2 and iracing, but on the upside this games look pretty darn good graphically if you have a high end system to support it.
As for minimum requirement to run these? If u refer my siggy below, thats the spec I'm using to run rf2 and iracing at med settings, so I personally think its not that pricey to setup a PC for sim racing(unless ur the type of person who emphasis game graphics alot, but for me graphics are irrelevant when u fully concentrated racing in the sim)
Hardware setup, if tight on budget, start off with a table and a normal chair, I even heard of super fast drivers who used to race with stool

so good and expensive setup won't necessarily make u go faster
I started off with very small budget as well and improvise with what I got, then only slowly upgrade to my current setup.
