Yes it does coz it's encoded at higher sampling and bitrate compared to normal DD and DTS. It's definitely not a gimmick. HD video are pretty much just video with higher bitrate and resolution as well. Both are pretty much the same comparison really.

Yup only HDMI can give u 7.1 or even 5.1 HD audio as optical connection had limited bandwidth so you're stuck with only standard definition DD5.1 and DTS audio thru optical output.

Higher bitrate it may be, but if it doesn't sound better then its no use. Obviously it would sound better but you'd also need to spend alot to benefit from it as well. For most, DD5.1 and DTS still suffice.
