Hey there, I'm a new student of culinary arts. I like this course a lot, but there's a problem that's making me think of changing my course. I've got knee problem, and it's been bothering me because of the job nature that I have to stand up while working. I know my knees will hurt real bad in future because my dad also has this problem and I myself have this problem when I used to play basketball. It's a kinda passed down problem. Should I just stick to this course or change my course? Is there anything I can do to reduce the knee pain?

Guys, can a student from Culinary Arts change line to something other than hospitality or are we just stuck in hotels, restaurants or cruise for good? I'm ending my diploma soon and I'm actually reluctant to work 6 days a week unlike before. Can we like sorta take up management but not hospitality management? Or food science or food technology?

QUOTE(babidiot @ Jul 23 2010, 06:12 PM) Go Renaissance Malacca Hotel! Their current GM very VERY staff oriented =) Too bad I'm not working there liao =( Hehe, but thats just my opinion la Never heard of Philea Resort n Spa. Where is it? Yes, there's exactly where I applied for my internship. I wonder if I can get it or not. Philea resort is located just after the Ayer Keroh toll, it's pretty damn big. Actually really big for a Malaccan hotel I guess. Some said it's a 6 star hotel but I dunno la that's why I asked. I've always wondered why can't I keep long hair in the kitchen if I'm a guy, I can always wear a hair net or keep it inside the uniform what. And girls pula are allowed to keep their hair. Can someone explain?

Guys, I'd like to pursue a degree. Are there any local universities that offer degrees related to CA? A friend said UTAR does, but I checked their website and there's nothing hospitality related in the website.

QUOTE(maxsia @ Aug 23 2010, 09:56 PM) as far as i know, Taylor's University College already offers a degree course for CA. in collaboration with the university of toulueese france or something, you'll be receiving a bacpro france degree and you get to go to france for 2 weeks in your final year. Oh man, I'm actually looking for a cheaper option as my dad's gonna retire real soon. Aren't there any local Unis that offer degree in hospitality management or something similar?

If you're really interested in this line, I would personally recommend you to go work first for awhile. Work in a kitchen, experience the real life of chefs, see if you can take the heat and decide. There's nothing to loose this way. You gain experience, and money. Experience is very important in this job. You gain more exposure when there are competitions among colleges and sometimes, FHM competition. Or at least work part time in a banquet kitchen.
Really, if you could turn back time I would never have went for college first but rather, work first.
So here's my question for the seniors here, are there any possible ways that I may use my culinary diploma to apply for any other courses that are not related to the service line? I was hoping that I could get into food science but...

QUOTE(UnknownH @ Jan 29 2011, 11:51 PM) experience first?where can?is it possible? Added on January 30, 2011, 7:15 pmi mean is it possible for a restaurant to employ someone without experience?? In reality, you need to know that most chefs you see in hotels are people with a lot of experience but zero papers. They didn't go through diplomas, degrees, certs and all that. They all climbed the ladder through hard work and perseverance. This job isn't really about having a paper, it's more about your skills and experience as a chef. Don't expect much even with the extra paper. I'm not saying you shouldn't take a diploma in it or what, you still need to know that 10 years from now everyone has a diploma in culinary arts and it's gonna be a tough competition. To answer your question, YES, it is possible. But of course you need to know that you'll be doing all that kuli job; taking in stocks, peeling, chopping, heck perhaps even washing. Try to work in a Chinese banquet kitchen, it truly hones your skills and puts you to the test. Don't expect to hold the wok anytime soon though. These days, it's not like the olden kungfu days, not all chefs will torture you and won't teach you a thing.

Im not discouraging but it is true. restaurant is fine +1 on this. It's really damn stressful. Just try working in as a kitchen helper and suffer!
