I was a X KDU degree student in management. Working in hotel is good if you do not have family commitment (due to working preasure and odd working hours). After graduate, plz do not expect high salary or post. Even after obtaining a hons degree, I have to be a FOA in 5 stars hote. haizz... Certification is like a passport or a visa for us to work. Determination, passion and a little of networking (aka politic) will get you on top. Anyway it is good to share experience over here. Good Luck !

Through my opinion, all the fussy and fierce lecturer is in hotel... Chef not that much...
But there is 1 thing... I like Mr Rajah... A good man... Nice and friendly...

To All:

Need abit of every1 POV and ideas... Hope every1 contribute generously... smile.gif

I need to figure out a simple menu consist of a hot soup and a main dish made out of lamb or mutton....

I have this theory that my soup should be light as the main dish is already heavy... Is this theory correct?

Here is what I have come up with...

Soup: Tomato Soup
The main dish: Grilled pepper lamb cutlets

And I need to do the food costing for this... Could any1 teach me how to do that?

What is the best way to cook lamb rack?

And also ideas for sweet potatoes as a starch to go with the lamb... ?
