what is the difference of studying culinary arts and those with dietitician and food science degree? Just wondering

i am just wondering, do H&T students learn about the biochemistry of food, how food is being processed and the way to preserve them?

ALso, if let say i am majoring in food science and dietician? am i eligible to be into the hotel industry since i have the knowledge of sciences of food? Do i need to to take any certificate of hotel management before i am eligible to join this industry?
