yah, sucks to turn out that way. i'm only using a prosumer cam. sometimes i feel that the camera had reached the limit of what i want to capture. everytime i want to keep the sky, the subject will turn out to be underexposed. but if i jack up the exposure, then the sky will be blown. i really have no idea how to fix this already. 
Try and put on a ND8 or CPL when shooting under very good weather and lighting. You will get more contrast and will reduce blown out highlights.
