There are chemicals introduced into the water that makes the plants produce more sugar & store in fruit. Farmers have meters to test sweetness of fruit. Learned it during a fertigation course.

if that is really the case, then they have been amiss in regulating nutrient levels. A friend of mine grows dwarf cherry tomatos...very easy. This year the prices of urea, SOA, DAP, rock phosphate and MOP have risen a lot. I won't be surprised your usual brand cut back on potassium level to save money.
