You can try using cable to connect both phones using the usb C cable to do the restore (If both usb C iPhone).

Something is wrong. The update part only 10 mins at most. Try connecting to other internet like hotspot.

Got few tries transferring the between old and new one. After few resets (new one) and few restarts finally it's doing the job properly.  

Mine also updated in less than 10 minutes.
Now transferring already.

1 hour to go. Let's see. How long it takes. Just nice for me. Can go and bath and dinner.

Yeah, now everything is up for me.
Eh, it is very easy. When I did side by side transfer, after it is completed, it straight prompted asked if want to transfer to the new phone, I just tapped the number and OTP will be sent in. Keyed in OTP, my eSIM is transferred and activated. That's all.
