I'll never use an iphone, especially if I need to do heavy editing.
Android is more 3rd party friendly and very easy to move around.
But if you plan to do youtube channel, a decent phone camera good enough, gimbal yes, but if its indoor, you need to invest in good lighting too.

its better you start youtubing with whatever you have first. viewers care more about quality contents than your filming gears. make any video first then see how it goes, adjust content style according to viewer input then once you get actual growth in viewership or subscribers, you wanna splurge on better hardware then go ahead.
