Just keep it simple. Let the shop handle everything for you.
2nd year you can just get your own insurance.
Even my insurance agents that does all our insurance just say better let everything taken care off then go with him 2nd year.
While technically it is possible to get your own insurance from the get go, you first need to get shop to get the bike registered. Then you get your insurance, then pass the details back to the shop so they can get the road tax for you. Basically double work.
Unless you just ask the shop to only register the bike and you go do the insurance and road tax yourself.
Honestly it's not worth the hassle. Not much savings to be had. And if your bike is bought under HP, the HP provider may also have other requirements for insurance that you need to follow.
