Why no one cooked biryani like this in bazaar, Ramadhan ?

This kind of biryani actually can make good money, cook on the spot at the location. I only see colourful rice packed separately with kuah daging/ayam. Bought once but didn't like it as the rice is either dry and kuah is sweet to my liking.
