You can connect the enterprise SSD using an M.2 to PCIe adapter since your GPU occupies the PCIe slot. It's totally feasible to use it as a boot drive if your motherboard supports booting from PCIe devices. Typically, you won't need a separate controller for this setup. Those M.2 to PCIe converters should work fine, just ensure your motherboard supports booting from PCIe devices.
