Don't do it. I live at my in-law's and it's an old home design. Kitchen is big but when cooking goes on with the fan on, the whole place will smell of oil. Even if water is being boiled over the fire, the whole kitchen gets very warm when fan is on. Exhaust fan reduces the oil/smoke/warm air in the kitchen but not eliminating it.

Fan on without cooking is OK.
