For pure driving pleasure, even with very low speeds, can't beat MX5 or 86. RWD and manual. You should've seen there's lots of MX5 on Sydney roads. Go along the coast to Kiama, it's really nice especially the bridge. Test drive both la or heck test drive them all.

I just thought of another one, Fiesta ST. Please please go test drive that one. I've only driven it once, a previous gen Fiesta 1.0 3 cylinder but my god that chassis is something else. That car is designed with fun in mind.

You have to find out yourself bro. Test drive lo. RWD is fun for drifting ma you don't drift on the road. Fiesta is fun because first time I oversteer in fwd.
