Fate series have many more additional characters apart from Fate/Stay Night. The FSN series was the only series that released for anime version. Other Fate series are Fate/hollow ataraxia, Fate/zero and Fate/tiger colosseum. Dark Saber appeared in Fate/hollow ataraxia if I am not mistaken.

Archer for example serves Allaya in capacity as Counter Guardian before he was summoned for 5th Grail War. Allaya is a force of Nature that will defend Mankind at all cost in Typemoon Universe. The throne of heroes admitted worthy people, animals or machines that served mankind in real world.

6. Dark Saber appears in 3rd alternate story, Heaven's Feel. She is corrupted Saber when she is eaten by Dark Sakura in earlier part of story. Later on, Shirou will fight her with Rider and kill her in climatic combat. If Shirou choose to fight Dark Saber alone, he will defeat Dark Saber using angelic version of Kanshou and Bakuya (my powers can split a river and level a mountain mantra chant) but he loses his sanity since he using Archer's hand which overwhelms his Magic Circuit.

The anime is based on 1st story, Fate which Saber basically dead and went off to Avalon, the 6th Magic in Typemoon Universe. In Realty Nua, a new epilogue when in far, far future; Shirou will meet Saber again in plain greenfields of Avalon and both will live forever as lovers beyond all time.

Yes, its an eroge and there are sex related scenes just that there's only like 2-3 in them IINM. Not as many as other eroges.
Its based more on the story.
On another note, most visual novels released in Japan are eroge except for a few games like Clannad etc.

The PS2 version Realta Nua has the H-Scenes removed though and it has voice overs
