The general rule starts with the mid range and pick from those manufacturers who also make the NAND flash themselves.
Toshiba (Kioxia) - Inventor of flash memory, but not really selling consumer product here in mass amount. More commonly found in OEM machines.
WD - Sandisk (under WD) works with Kioxia in the same manufacturing plant.
Micron - Sells consumer product under Crucial brand
SK Hynix - Bought over Intel's SSD business and rebranded as Solidigm. Still sells it's own product to OEM under SK Hynix though.
Samsung - Typically overpriced for the same amount of thing from other brand.
Kingston - Not a flash manufacturer, but runs a large volume and has a lot of bargain power to flash manufacturers. Does occasionally release some crappy low end products but they do work if the user is just doing ordinary use cases.
SATA :
There isn't much choice for manufacturer to invest in new controller since everybody is moving to NVMe.
First line choices : Kingston KC600 / Crucial MX500.
Second line choices : WD Blue SA510 / Samsung 870 EVO
NVMe :
Plenty of choices but going too high end is pointless since it requires you to have new platform (i.e. PCI-E 5.0) to take advantage of the speed. They also run fast and hot, but in turn you don't really feel the difference with mid range unless you do suiciding amount of data transfer everyday.
First line choices : Kingston KC3000 / WD Black SN850 -> Make sure your board has heatsink for it or just buy the heatsink version if it doesn't interfere with other parts.
Second line choices : WD Blue SN580 -> Low power + low heat version, runs acceptably fine.
