 why does food seasoning powder become harden

my garlic powder and other herbs powder i use for seasoning, after 1-2 months. it becomes harden and clump together like a mini rock rather than the powdery form when i bought it

why is it happening? is it because of moisture? how to prevent it?

i asked my fren who is a chef, he said he doesnt know and his powder is used up before 1 month.

Moisture.

Either put in refrigerator or in a container with food safe moisture absorber.

This is one of the cause

Hot steam rise on top and if you shake it on hot food moister gets into it

I put mine in the fridge solve the problem. Used to use chopstick and korek until I found a TikTok video on this

The same happens to Milo, Horlicks, instant coffee powder, etc. As mentioned by some people here, store in fridge.

Humidity. Our tropical weather humidity > 70%

Just keep it in fridge. If worry about other food absorbing the smell, put it in a seal container in the fridge.
