Looks good to me, kind of relaxing and not rushing all over the places.. Seems like you are not into shopping ah?
Some comments here:
Day 2, NP360 is just the name of the cable car, so actual sightseeing is the Ngong Ping Village, Big Buddha and Po Lin Monastry. While there, can also visit the Wisdom Path. Looks like you'll have ample time, so I suggest after that, take the New Lantau Bus from Ngong Ping to Tai O - a fishing village, can have your lunch there if not taking the vegetarian meals at NP or Po Lin Monastery. Either take a bus back to NP and cable car back to Tung Chung, or bus from Tai O back to Tung Chung(40mins bus ride, around scenic mountain's and sea view, also passes by a big reservoir). At Tung Chung, can jalan jalan a bit at CityGate Mall - the outlets mall, even if you are not into shopping (hmmm, just enjoy the air-cond a bit)....
Day 3, am - not sure what ya means by HK Island City?
I would suggest instead of taking star ferry on Day 2 night, take the star ferry from TST (bus from Jordon to TST terminal) to Wan Chai Pier and visit the Golden Bauhinia Square.
To me Golden Bauhinia Square nothing special, i mean HK island City, will be staying in the HK island site since noon/evening will be going to the peak.
Any good places to go over here? thinking to take the tram "ding ding" to see around.
or any good place to shopping at HK island, causeway bay? what is recommended to go over causeway bay?

Day 4, after Ocean Park, how about dinner and jalan jalan at Causeway Bay?
Day 5, after Disneyland, maybe jalan jalan at Ladies Street and have supper at Mongkok area?
