You don't need it.
Maybe one day you may, activate it then. But you are safe in the knowledge that your watch can support Cellular. And activating it on the iPhone for Maxis takes only a few minutes when you need it.

Cellular plan very easy to activate but quite difficult to deactivate (need to call 123) and it will take around 2-3 days for them to process.

And yeah, come to think of it, I might just give it a go. The freedom of not having to carry the phone with me is intriguing and tempting to have! Having a large 6.7” iPhone in my running attire pocket isn’t exactly the most convenient thing.
