Like KH2 (don't know about Re: COM because haven't played that yet and I played KH eons ago! hahahah), there is Beginner, Standard and Proud mode. With regards to the storyline and ending, there is no difference in whichever mode you play. If, however, you choose Standard mode, and during a mission, you choose "Continue" more than 5 times (this is entirely possible if you didn't plan properly what items and all to bring with you and end up having your butt kicked by an enemy with a lot of HP ;p), then another option will show up (やさしくなってコンティニュー) that will allow you to finish off the mission at Beginner mode. When you complete the game, another option is available to you, "Theater Mode" where you can view all the movies (ie. certain cutscenes).
You equip armor, key chains, abilities, magic and items (even Levels!) within a "Panel Slot" and with every mission you complete, a new slot is opened. Really have to think hard on what stuff you want to equip depending on the mission that you go on because there are so many things you can equip and so little space (if you complete a certain amount of Trial Missions though, you can sometimes get better equipment/items/more panel slots unlocked).
When you kill Heartless with emblems, you collect Heart Points (and also Muny and the HP orbs) - and you buy items with Heart Points - NOT muny. Muny is only used when you're synthesising items. You can get more Heart Points by killing the Heartless in a chain - especially if you've killed one and you see a large circle that grows smaller around another, you tend to get more Heart Points. There is a Moogle that shows up on Day 26 that you can buy/sell stuff from and synthesise items at.
