You use the wrong method to cook. Normally cooking of the pok choy/kale is by passing the prepared vegetables into the boiling water & within 6-10 seconds, you need to strain the pok choy away from the boiling water & wash it in the cold water / ice water, & strain it dry.

The seasoning sauce (garlic hot oil & oyster sauce, cooked separately) of the vegetable are added to the cooked vegetable thereafter to preserve the freshness/ crunchiness of the pok choy.

YouTube got alot of correct videos. You can easily learn from there.

Normally, i dont cook the leafy green vegies by themselves, but I prefer to add them such as short sawi (not sure what it is in english) to cauliflower, carrot and broccoli-sometimes baby corn and cabbage. For one person - I use 3 or 4 shallot and also 2 garlics- brown them in olive oil-mke sure you brown them (important) but not over do it-you need the smell, pour a cup or cup and a half water, throw in half of those chicken cube, knorr or adabi. throw in carrot and cauliflower first, about 2 minutes before they will be at your desired softness-throw in the sawi. add pepper n salt to taste...(salt probably not needed anymore since you already use the chicken cube)

Let me tell you 1 trick to stir fry better green veggie at home. I bet all of you make this same mistake. 1 move and the taste will be totally different. Please keep this secret to your self.

Fry green leave veggie under high heat first then only put in chopped garlic. Most amateur put garlic first

Your life will never be the same again. Remember when wok is smoking hot with oil then only add the vege and stir fry with seasoning. After that only add garlic.

I bluff you all i cannot get rich one. I suggest heat wok with oil, then when very hot throw in green leaf vege (make sure water is drained after washing) , then throw in chopped garlic after 1 minutes of high flame, then pour little otster sauce into the oil part to cook the oyster sauce, then after 1 minute add chinese cooking wine, toss, then sprinkle salt, pepper to taste, do wok toss under high flame and serve
