As for abalone, the bigger they are the whiter their meat is. That is like eating geoduck meat. I prefer small size ones because they are much more sea sweet. However if you slice them thin enough you can wrap with salmon egg and sea urchin. A pinch of Ako Aranami Shio and a dash of lime. Supremo.
