Because pre made chili paste/ boh is cheap. If you start to include the other ingredients like belachan, shrimp or anchovies into the sambal, the cost goes up. Thats why he only taste the ground up chili paste taste only.
My mother in law oso likes to use ready made chili paste, last time I remember if go back kampung, nighttime will be helping her de-seed those dried chili so can soak and blend it to paste to be stored in freezer, nowadays she just used store bought ones when she makes sambal it doesn't taste as good.
