they added some heavy additives that looks and probably tastes similar to blood to create the aroma and texture you're looking for. not saying that it's dangerous but better don't overindulge. as with new additives, any negative impact can only be seen years or decades later.

soya bean + some special sauce that acts and tastes like blood. that's why it has the special aroma and texture like meat.
