S8 is a small phone, and small phone will always get sharper resolution compared to large phone. You should buy the small S21 instead. But it's too late to regret now. I can only suggest you to get rid of your S8. Sell it or give it to your family members or keep it in your drawer. Don't look at it. It may sound extreme but it's the most effective way to help you adapt to your new phone.

On a few articles that I read, they does not emphasis on the higher PPI, as differences on the PPI is hard to be notice by human eyes (unless you stick your eyes to the screen  ) and also will increase power consumption of the phone. Instead they emphasis on good display with better colour accuracy and better readability under the sunlight.
